<p><strong>Caramelized Onion and Goat Cheese Pizza</strong></p>

2 Tbsp olive oil<br />
2 cups sliced onion, separated into rings<br />
1 ball of Earth Fare pizza dough<br />
1/2 cup pizza sauce<br />
1/4  cup tomatoes, de-seeded and sliced<br />
2/3 cup goat cheese, crumbled<br />
1/2 cup mixed greens</p>
<p><strong>The Prep:</strong><br />
1-Preheat oven to 450 degrees<br />
2-Heat olive oil in a large nonstick skillet over medium-high heat. Add onion, cover for 3 minutes to sweat. Cook uncovered, stirring frequently for 10 minutes or until browned and soft.<br />
3-Spread pizza dough on baking sheet or stone. Combine sauce and tomatoes and spread mixture over crust. Top with onions and crumbled cheese.<br />
4-Bake for 10 minutes or until brown.<br />
5-Top with mixed greens, slice and goat</p>

A couple months ago, we caught a <a href="http://twitter.com/EarthFare" target="_blank">tweet on Twitter</a> linking to <a href="http://rachelosbornephotography.com/blog/2012/11/25/hannah-and-kevin-engaged-athens-ga-wedding-photographer/" target="_blank">a pretty remarkable engagement photo gallery</a>.</p>
<p>That was when we first met Hannah and Kevin&#8230;</p>

<p>This couple&#8217;s true-life love story included a health journey that coursed through the aisles of the <a href="http://www.earthfare.com/OurStores/Athens.aspx" target="_blank">Athens, GA Earth Fare</a>. Together, Hannah and Kevin grew healthier, happier and deeper in love. Now they&#8217;re engaged to be married in October!</p>
<p>That made us wonder: What would it look like to fall in love at first bite? Could a simple trip to pick up a pineapple change your life? That&#8217;s how Hannah and Kevin&#8217;s story inspired this video.</p>

<p>Congrats to Ania W. from Cleveland, whose story gives new meaning to that ol&#8217; &#8220;Rub a dub dub, thanks for the grub&#8221; saying:</p>
<blockquote><p>The most unusual dinner I ever had was when I lived in Eastern Europe as a child.</p>
<p>The country I lived in was poor, and the food was hard to get. We used to stand in lines for hours to get basic foods. So to get the traditional carp for Christmas Eve you had to jump some hoops, use your friendships and connections.</p>
<p>This meant that often the fish would have to be purchased days ahead. That is fine, the only problem was that the fish was sold alive!</p>
<p><a href="http://tomatotalk.earthfare.com/wp-content/uploads/2013/01/ryba.jpg"><img class="alignright size-medium wp-image-5012" title="ryba" src="http://tomatotalk.earthfare.com/wp-content/uploads/2013/01/ryba-300x210.jpg" alt="" width="300" height="210" /></a>So my family purchase two carps, a week before Christmas and …. put them in a bathtub to keep them fresh! I know what you are thinking. Yes, we did get them out and scrub the tub before bathing!!!  But our only bathroom became home for our Christmas Eve dinner for the whole 7 days. Being kids, we played with the fish, fed it and grew quite attached to it. It came as a shock when it was time to get the supper started and my dad came out of the bathroom with the fish on a plate.</p>
<p>That was the most bizarre and unusual dinner I ever had since. The oddest thing was that as much as we were traumatized (being just children) my sister and I still enjoyed the fish as it was a rare treat.</p></blockquote>

1 1/2 teaspoon chopped fresh thyme              1 egg white</p>

<p><strong>Directions:</strong><br />
Preheat oven to 400 degrees. Combine cranberries, apricots, almonds, honey, thyme, 1/8 teaspoon salt, and pepper in a medium bowl. Set aside.<br />
Roll puff pastry to 12 inch square. Trim top rind off Brie and center cheese on pastry. Top with fruit mixture.<br />
Beat egg white and 1/8 teaspoon salt in a small bowl. Brush egg wash along pastry edges. Gather dough up around Brie, twisting into a topknot. Chill in freezer for 15 minutes.<br />
Brush pastry lightly with egg wash and place on a parchment-lined baking pan. Bake for 35 minutes.</p>
<p>Serve with crostini, pita chips or crackers. Enjoy!</p>
