Edwards story (in his own words…)
I didn’t always have a healthy lifestyle. But thanks to a few friends and the increasing availability of fresh foods, I have made some big changes in my life.
In college, my diet consisted of microwave burritos and cheap beer, and my exercise plan consisted of prime time TV followed by video games. My friend Joe got me to start going to the gym with him and once I felt the benefits of exercise, I was hooked.
After college, I started to run long distance and completed a few half marathons and marathons. A close friend of mine named Honza was a yoga teacher, and he introduced me to yoga and healthy eating. Honza taught me that healthy eating was as simple as eating the correct portions and eating food that was as close to its whole/raw form as you could find. This revolution in the way I selected my meals has improved the quality of my life in a huge way.
Now, I work in Durham and I visit Earth Fare in Brier Creek at least once a week to stock up on healthy foods to eat on my lunch break. My wife, Angelica, is an incredible cook and an amazing organic gardener. She helps me to keep my diet in order at home (even though there is no Earth Fare close to our house in N. Raleigh, hint, hint).
Now, Angelica is 7 months pregnant and our little bundle of joy has been eating healthy with the help of his Mama. I even found some pre-natal vitamins on sale at Earth Fare a few months ago. I am so glad that our son will start out on the right foot with healthy eating and a healthy lifestyle. Well, that’s my story and I am sticking to it.
